Oh my goodness. This video just captures that pure baby happiness. I love those little belly laughs.
I found this darling thing one day while reading A Cup of Jo. And it just won’t get out of my head. So adorable!
And for the record … we’re not planning on babies any time soon. If we liked animals, we’d be in the whole “let’s get a dog to tide us over until we’re ready for a human” phase. But since we both can’t stand any sort of pet, we may have to get a rock. Timothy wants Sea Monkeys. We’ll see.
Just pass me a flour-dusted apron, a pile of laundry to fold, and a mini-van. I’m well on my way to becoming a homemaker.
I passed the Crock Pot test.
My dear Bibi bought me a Crock Pot right after we got married, over two years ago. It immediately gave me visions of a spotless house, perfectly coifed hair, and a myriad of delicious dinner smells welcoming home my dear husband from a day at work. All because I was rocking the Crock Pot. Well … no rocking has been done around here. Until this week.
I found this recipe for Italian Chicken on none other than Pinterest. It sounded delicious, economical, and easy.
I knew that my perfect opportunity to experiment was this past Wednesday. Timothy has to work really long hours on the last day of every month. To compensate, his company provides breakfast, lunch, and dinner to all their employees that day. So Timothy would come home really late and not super hungry. If my Crock Pot meal was a flop, it would be no big deal.
The recipe called for 4 – 6 potatoes, but my Crock Pot is a smaller one and could only fit one potato. I crammed that little pot as tightly as I could with the ingredients and just barely got the lid on.
It was very hard to leave it alone for the required amount of hours. I kept taking the lid off and poking the carrots to see if they were cooking. And texting my mom to see if I was doing it right. I’m sure that was a fun night for her. Ha!
The final verdict? DELICIOUS!!! Oh Crock Pot, where have you been all my life? Oh that’s right, under my sink collecting dust with all those Swiffer mop things. Clean floors are overrated.
This meal was so good that it made my husband’s top ten. And that’s a hard top ten list to crack. The potatoes and carrots were so good and the chicken?! Perfecto. This beats out every other method of cooking chicken.
I’m definitely going to make this again, as well as search for more Crock Pot recipes. I’ve found quite a few promising ones online. And not surprisingly, my favorite way to keep them organized is through Pinterest.
I pin all delicious looking recipes to one board.
And then I move all the ones that I’ve tried and liked to another board. That way it’s easier to get to my beloved recipes more quickly. And yes, five out of the seven of those recipes pinned are from Pioneer Woman. She’s a food genius.
